Pie

Today I made lots of pies.  Yum!


Our ward had a Relief Society activity last night and I was asked to teach how to make pie in a jar.  It was a homemaking themed night with two classes, the pie class and a wall decor class.  It was so much fun!  However, I probably shouldn't have been the one to teach the pie class because it was my first time making pie since I was 15.  They seemed to turn out alright (a little brown on the edges though).  My partner Shawna made the filling and I made the crust.

So I had seen on pinterest the idea to make pie in a jar.  It was so fun to have our very own personal pies and they were so yummy to eat and would make the perfect gift for a birthday, get well, teacher gift, or a visiting teaching treat.   I will just tell you how to do it!

Whip up some pie filling (or buy a can from the store) and some pie crust (recipes below).  

Then take little pieces of crust and flatten them with your hands and put them inside the jar (use a small glass canning jar).  Keep doing it until all the class is covered on the inside, almost like making a pinch pot.  

Put a small blob of butter in the bottom and then fill with pie filling until it is just under the lip of the jar.  

To make the top of the pie you can either pinch the crust flat with your fingers or you can roll out the crust and then use the lid of the canning jar to cut a top piece out.  Put the lid on the top so that it is just below the lip of the jar.  You want everything to be just below the lip so that you can put the lid of the canning jar back on.  

Cut some little slits in the top, put the metal lid on, and you are done!  It can be cooked right away or frozen.  Just make sure to put a cookie sheet under the jar while it is in the oven because they tend to overflow with juicy sweetness!

They ended up being delicious and just the right size for one person.  I hope you make them because they are so fun!

Shawna's Peach Pie Filling
(For a 9 inch pie)

5 cups sliced fresh (or frozen) peaches.  If frozen, let some of the liquid drain out.
1 tsp. lemon juice
1 cup sugar
1/4 cup flour
1/4 tsp. cinnamon
2 Tbls butter or margarine

Mix peaches and lemon juice.  Stir together sugar, flour, and cinnamon.  Mix with peaches.  Put into pastry lined pie pan and dot with small bits of butter all over the top.  Cook at 425 degrees for 35-45 mins.

(for a 10 inch pie or 7 mini pies in a jar)

1 cup shortening
2 2/3 cup flour
1 tsp. salt
7-8 Tbls. cold water

Mix ingredients until slightly crumbly.
For full pie cook at 425 degrees for 40-50 minutes.
For jar pies cook at 425 degrees for 35-45 minutes.

A Blanket for Ella

My most recent crochet project was for my sister-in-law's new baby Ella.  I absolutly loved this pattern! I also am a fan of purple.


Yet again, I had a hard time giving the blanket away but I was super excited when Holly sent a picture of little Ella laying on it.  We haven't gotten to meet Ella yet but will this summer.  So excited!

Today's Favorite


My favorite thing today was watching Elsy throw this green ball all over the porch.  She loves the warm weather and is so content to play out on the porch while I do my chores.


Logan helped me put up a little fence.  I know she can't fit through the porch but being three stories up the fence helped me have peace of mind.

And of course, my destructive daughter pulled a bunch of flowers and leaves off my potted plants.

A Leavenworth Weekend

Can I just say I love Logan's job?  Not only is it a wonderful job he likes to go to, but it has some great perks.  One of which was a weekend company getaway to Leavenworth!  We stayed at a place called the Sleeping Lady (very creative name by the way).  It was fun to get to have a fancy dinner with all the families Logan works with.  Here is a picture of our cozy little one room cabin. 




We all got company sweatshirts to wear around too! 


The next day we went into town to do a little window shopping.  If you don't already know, Leavenworth is a little town up in the Cascade mountains of Washington.  All the buildings have to build in a Buvarian theme.  Even the McDonalds!  It is so fun and old fashioned.  We got lucky to be there on a festival day so all the workers were dressed in old traditional German garb.


There were some fun shops!


If you know us, we can't pass up a good bakery...


Nutcracker central:  Elsy meets Sir Hans the nutcracker. (Yes those are all nutcrackers!)


Before we left we had to try out our new baby backpack we cently found for a great deal.  So we went on a little jaunt down by the river.






Elsy ended up sitting in the water and getting a little sandy.  Definetly something we are going to have to get used to!


We had a blast and were so grateful for Logan's company for letting us have such a fun weekend!
